Abstract

This research presents the results of the selection of materials for induction cookware, where the interrelation between the requirements of design, material and processing of the product have been taken into account. The physical properties that they must have have have been identified, together with the restrictions for health, appearance, material and processing cost, as well as, the capacity to adapt the manufacturing processes to realize the cookware by the Ecuadorian industry. Next, candidate materials that meet the above requirements have been identified, such as AISI 430 or electromagnetic steels, as well as materials that are commonly used in kitchenware. Finally, different material selection models such as the Pugh, Dominic and Pahl-Beitz methods were used to select the best materials for the process. The results show the existence of three configurations of candidate materials such as: a) AISI 430 or AISI 436 stainless steel, AISI 304 stainless steel and Teflon non-stick coating inside, b) AISI 430 or AISI 436 stainless steel embedded in the bottom of an aluminum pot and c) Cast iron with vitrified treatment.
